Chef Jeff’s Cauliflower Casserole

Ingredients

  • 1 head white cauliflower, chopped
  • 1 head yellow cauliflower, chopped
  • 6 eggs
  • 2 cups light cream
  • ¼ cup Swiss cheese, shredded
  • ¼ cup Romano cheese, shredded
  • ¼ cup Parmesan cheese, shredded
  • ¼ cup mozzarella cheese, shredded
  • salt and pepper to taste

Preheat oven to 325 degrees. Place chopped cauliflower in a baking dish. Top with Swiss, Romano and Parmesan cheeses. In a medium bowl, mix egg and cream together. Pour over cauliflower and cheese mixture, and bake for 20 minutes. Remove dish from oven and increase heat to 350 degrees. Top cauliflower with mozzarella cheese and bake for another 20 minutes, or until cheese is golden brown. Serve with tomato sauce or hot sauce.
